Description

Homemade tea-time baking. Oat thalers are, as far as I know, a type of traditional German pastry. I have to say, even German pastries and cakes are very filling, a little rustic and hefty, but very, very tasty. Making oat thalers is not the easiest thing, but the result is worth the effort. The thalers turn out simply wonderful. I hope you enjoy the recipe and bake thalers every bit as tasty and pretty as in the photo. Good luck! :) The baking is done. Serve at the table.

    First, grind the almonds to a fine crumb consistency.

    Dissolve the sugar in a small amount of water (about 1/3 cup), place on the heat and cook a sugar syrup. When the sugar has completely dissolved, remove from the heat and cool.

    Let's get started on the dough. Mix the flour, thin rolled oats, cocoa, sugar, baking powder, and butter cut into small pieces. Stir together, make a well in the centre, crack in the egg and egg yolk, and mix until smooth.

    Now pour the sugar syrup into the mixture. Mix again until smooth.

    In the end you should have a fairly heavy ball of dough like this. Wrap it in plastic wrap (or simply wrap it in a towel) and put it in a warm place.

    Now let’s make the filling. Toast the rolled oats in a small amount of butter until the oats turn crisp (like potato chips, for example).

    Raisins should be rinsed and dried with a napkin.

    Whisk the egg whites with salt until foamy; then, while continuing to whisk, gradually add sugar (about 100 g) and whisk for another 5 minutes or so.

    Mix the toasted rolled oats, raisins, and the resulting egg white mixture.

    Divide the dough into 4 pieces and roll each piece out into a sheet 0.5 cm thick. Cut circles from the dough with a round cookie cutter or a regular glass 6 cm in diameter.

    Line a baking tray with parchment paper or grease it with butter. Place the cut-out circles on the tray, put a little bit of filling on each one, then cover the filling with a second identical circle. Lightly seal the edges. Bake for 20 minutes at 180 degrees.

    Done! Cool and serve with tea or coffee.
