
Oatmeal turnovers
Description
Delicious baked treat for the whole family. Oat flour gives the dough a pleasant, slightly nutty aroma and a crumbly texture. Shortbread dough with oat flour is always perfect and fragrant. Serve cooled or slightly warm.

Beat the butter with plain and vanilla sugar until the granules disappear.

Add the sour cream and egg, and quickly beat again.

Add the sifted mixture of oat and wheat flour with baking powder and salt. Quickly mix the dough with a spatula.

Shape the dough into a roll and let it rest on the counter for about 15 minutes, covered with a towel.

Mix the cottage cheese well with sugar, add freshly grated lemon zest, sour cream, and rinsed soaked raisins. Mix once again.

Cut the dough into equal pieces.

Roll out each piece into a pie. Roll not too thin—about one centimeter thick is just right. Place the filling on one half of the pie, then fold the other half over. Do not crimp the edges.

Place the pastries on a baking sheet lined with parchment paper or a silicone mat. If desired, brush the tops of the pastries with egg and sprinkle with sugar. But I prefer my oat pastries softer. Bake in a preheated oven at 180°C until golden brown.

It's tastiest to serve syrniki slightly warm. You can sprinkle the top with powdered sugar, but they're delicious even without it!
