
Oat pancakes with yogurt
Description
It goes perfectly with tea and coffee. Golden pancakes with a delicate, creamy flavor are sure to please your family and friends. They are easy to make and keep hunger at bay for a long time! They are especially delicious served with pastry cream, jam, or preserves. Serve them cooled or slightly warm.

Prepare the ingredients listed. You can use fine- or coarse-ground oat flour. If you add coarse-ground flour, give it an extra 30 minutes to hydrate, or better—refrigerate the dough overnight.

Pour classic yogurt of any fat content into a deep bowl and beat in a chicken egg. Add sugar and salt and whisk thoroughly. You can also add a little vanilla sugar for aroma.

Add the oat flour and mix everything thoroughly. Leave for at least 30 minutes so the flour can hydrate. Ideally, mix the dough in the evening and refrigerate it overnight to hydrate. Before frying, remove from the refrigerator, let come to room temperature, and fold in the baking powder.

Heat vegetable oil in a frying pan and drop the prepared batter into it with a tablespoon. Fry over medium heat for about 2 minutes, then turn them over. Fry for the same length of time. Bear in mind that the pancakes can burn quickly!

Transfer the hot pancakes from the skillet to a plate and serve at the table with sour cream or cream, jam or preserves.
