
Oat muffins with raisins
Description
Homemade baked goods for tea. The fluffy, aromatic muffins turn out very tasty and healthy, and they look simply delightful. The ingredients listed in the recipe are enough to make 12 muffins. If you wish, you can serve these muffins with jam or chocolate spread. The baking is ready. Serve at the table.

1. Mix rolled oats with kefir and let stand for 30 minutes. Place the rack in the middle position and preheat the oven to 200 °C. Spray the 12‑cup muffin pan with cooking spray or line it with paper liners. Mix the flour, baking powder, salt, baking soda, cinnamon, and nutmeg.

2. Spread the nuts evenly on a baking sheet. Bake until fragrant, about 5 minutes, shaking the sheet every few minutes. Transfer the nuts to a small bowl. (If you leave them on the hot sheet, they will continue to roast and may burn.) Add the lightly beaten eggs to the oat mixture one at a time, beating thoroughly after each addition. Beat in the sugar, then the butter.

3. Stir together with the dry ingredients until smooth and gently fold in the raisins and chopped nuts.

4. Evenly divide the batter among the muffin cups. Bake until a toothpick inserted into the center comes out clean, 13–18 minutes. Place the pan on a rack and let it cool slightly, about 5 minutes, then use a knife to remove the muffins from the pan.
