
Oatcakes with nutmeg
Description
Delicious baked treat for the whole family. This recipe yields 12 flatbreads. Serve warm or chilled. Perfect with tea.

1. Preheat the oven with the rack in the center to 200 degrees. Line a baking sheet with parchment paper or a silicone mat. Cut the butter into small pieces. Beat the egg and milk together. Whisk flour, oats, sugar, baking powder, baking soda, salt, and nutmeg in a large bowl. Add the butter pieces and mix with your fingers or a pastry cutter until the mixture resembles coarse crumbs. Pour the milk mixture into the dry ingredients and stir with a fork until the dough becomes sticky. Do not overmix.

2. Knead the dough by hand or with a rubber spatula 8 to 10 times. Place the dough onto a lightly floured work surface and divide it in half. Shape one half into a circle about 12 cm in diameter, cut it into 6 wedges, and place them on a baking sheet. Alternatively, roll out the dough and cut out round biscuits using a cutter. At this point, the biscuits can be tightly wrapped and frozen on the baking sheet. Do not thaw the biscuits before baking—simply add about 2 minutes to the baking time.

3. Bake the biscuits for 20-22 minutes, until golden brown. Place the biscuits on a rack and let cool for 10 minutes before serving, or wait until they cool to room temperature.
