
Oatcakes with icing
Description
The pastry is simple and quick to prepare. This recipe yields 8 flatbreads. Serve cooled or slightly warm.

1. Preheat the oven to 190 degrees. Spread the oat flakes on a baking sheet and bake for 8–9 minutes. Let cool completely. Increase the oven temperature to 230 degrees. Line another baking sheet with parchment paper.

2. Mix all dry ingredients, except for the oats, in the bowl of a food processor, 6-8 times. Add the cold butter cut into pieces and mix 12-15 times.

3. The mixture should resemble wet sand. Transfer the mixture to a bowl and mix with the cooled oat flakes.

4. In a small bowl, mix together milk, cream, eggs, and maple syrup. Whisk the ingredients until combined. Measure out 1 tablespoon of the mixture and set aside for the glaze. Add the milk mixture to the flour mixture and stir with a rubber spatula. Knead the dough about 6 times, then transfer to a floured work surface and gently knead a few more times. Shape the dough into a disk about 17 cm in diameter. Cut into 8 wedges and place them on the prepared baking sheet. Refrigerate while preparing the glaze.

5. Mix the reserved tablespoon of milk mixture with maple syrup.

6. Brush the slices with glaze. Sprinkle maple sugar on top. Bake for 12-14 minutes, until golden brown. Let cool for 10-15 minutes before serving.
