
Oat pancakes with kefir
Description
For softer and thinner pancakes, replace rolled oats with oat flour. There's no need to soak it, just mix kefir and flour. You may need a little more oat flour. Serve warm or chilled. Perfect with tea.

Prepare the necessary ingredients.

Grind the rolled oats in a blender or coffee grinder until they reach a light, coarse texture. If you want to make more delicate pancakes, grind the oats to a finer consistency.

Transfer the oatmeal into a deep bowl, and pour in kefir at room temperature.

Stir, cover with a towel, and let sit at room temperature for 30 minutes.

After half an hour, add the eggs, salt, sugar, baking soda, and vegetable oil to the bowl with the soaked oats.

Stir with a whisk. Place the pan to heat up.

If necessary, grease the pan with vegetable oil. Pour half a ladle and spread the batter over the bottom of the pan. It will be difficult for it to spread, so it’s easier to do it with a spoon or ladle. Fry until small bubbles appear on the top side of the pancake.

Flip the pancake and fry the other side. It will take 2–3 minutes.

Stack the ready pancakes. If desired, spread with butter and serve.
