
Dietary oat pancakes
Description
Perfect for serving with tea and coffee. Oat pancakes are easy to make. The only requirement is having oat flour, or being ready to make it at home. For this, you'll need a blender that can grind dry ingredients or a coffee grinder. For the pancakes, I often use potato cooking water, which gives the batter elasticity. It can be substituted with water or whey.

So, we'll need oatmeal flakes. If you can find oat flour in the store, then of course the following steps will be easier. But we can manage just as well using a blender or coffee grinder. Pour the oats into the blender.

Grind the oats into fine crumbs. If your blender allows and you want to make thinner pancakes, grind the flakes directly into flour. Pancakes made from flour will turn out classically thin.

For dietary pancakes, I always use either whey or potato water. We eat potatoes often, so I had some potato water left. I pour it into the resulting oat flour, rubbing it with a fork at the point where the flour and liquid meet, then add a pinch of baking soda. You can add salt and sweetener to taste, but I won't. Then I add 3 tablespoons of sour milk to neutralize the baking soda. I add vanilla and mix everything thoroughly.

For frying pancakes, I will use a non-stick frying pan. After all, pancakes without any oil at all. I pour a ladleful of liquid batter onto the hot pan and spread it out. I fry each pancake on both sides.

I stack the pancakes on top of each other, covering them with a plastic bag or towel to keep them from drying out. I'll drizzle them with buckwheat honey when serving. This is my delicious diet! Enjoy your meal too!
