Prepare all the ingredients.

Step 2

If you don’t have oat flour, simply grind oat flakes in a coffee grinder, or crush them using a blender or meat grinder.
- 3
Step 3

Add boiling water so that the flakes steep immediately.
- 4
Step 4

Mix everything well, add eggs, sugar, salt, and milk.
- 5
Step 5

Stir everything again and add the flour and baking soda.
- 6
Step 6

The batter should not be as runny as for regular pancakes, but also not as thick as for fritters. If the batter is a bit thick, thin it with milk; if it seems slightly runny, add a little flour and beat it again until smooth. If necessary, blend the mixture with an immersion blender to remove lumps. Finally, add vegetable oil.
- 7
Step 7

Grease the pan with butter and pour 2–3 tablespoons of batter. With a quick circular motion, cook the oat pancake until golden and flip it.
- 8
Step 8

Cook the other side until done.
- 9
Step 9

Similarly, cook the remaining pancakes until the batter runs out.
- 10
Step 10

Oat pancakes made with milk are ready.
