
Flourless Oat Cookies with Apples
Description
This recipe yields 18 cookies—flavorful and aromatic thanks to cinnamon, nuts, and apple. You can optionally add nutmeg or vanilla sugar. When shaping the cookies you can use a damp ice cream scoop so you get evenly sized scoops. I used dough balls about the size of a walnut; the cookies puff up a little after baking. Serve with tea or coffee.

Prepare the ingredients. The butter should be at room temperature.

Place the butter, sugar, and egg in the mixer bowl. Beat for 5–7 minutes until you have a smooth, even mixture.

Finely chop the walnuts. Put the rolled oats, oat flour, cinnamon, baking powder and nuts into the mixer bowl.

Mix everything thoroughly, leave for 10 minutes so the oats soften.

Peel the apple and grate it on the coarse side of a grater. Add to the batter and mix well.

The dough is ready; preheat the oven to 180°C and line your baking trays with parchment paper.

The dough is somewhat sticky, so you can shape the cookies with two spoons or with damp hands. Space the cookies apart when placing them.
