Oatmeal cookies with coconut flakes
Description
Oat cookies are very healthy, much healthier than other types. To make them even more aromatic, add coconut flakes. Instead of regular flour, I use rye flour, which gives the cookies a more original color and flavor. These cookies are especially delicious when cooled; they're perfect for dipping in coffee or tea—so tasty! Serve them warm or chilled. Ideal with tea.
Instructions
- 1
Step 1

Prepare all the necessary ingredients.
- 2
Step 2

Beat the eggs with sugar, then add butter (take it out of the refrigerator in advance so it becomes soft), vanilla, baking powder, and salt.
- 3
Step 3

Also add coconut flakes, oat flakes, and flour. Knead the dough; it should be quite thick but not stiff.
- 4
Step 4

Line the baking sheet with parchment paper and use a spoon to place small portions of dough for the cookies. You can shape them into rounds or any other shape. By the way, I recommend moistening the spoon (with water or oil) so the dough doesn't stick to it.
- 5
Step 5

I don't particularly shape the cookies, as I find it more original this way. Bake them at 180 degrees for about 15-20 minutes.
- 6
Step 6

You can sprinkle the ready oat cookies with coconut flakes with powdered sugar once they have cooled slightly.
- 7
Step 7

The pastry is ready. Serve with tea.
