
Oatmeal cookies with coffee glaze
Description
Delicious baked treats for the whole family. A recipe for oatmeal chocolate cookies with coffee and butter glaze. This recipe yields about two dozen cookies. Serve with tea or coffee.

Step 1

1. Make the cookies. Preheat the oven to 175 degrees. Line a baking sheet with parchment paper or a silicone mat. In a medium bowl, mix together flour, baking soda, cinnamon, and salt; set aside. In a large bowl, beat the butter using a mixer. Add both sugars and beat until combined. Beat in the egg, then mix in the vanilla extract.

2. Add the flour mixture in two batches and mix until smooth. Add the oat flakes and mix. Stir in the chocolate chips until evenly distributed throughout the dough.

3. Place one tablespoon of dough onto the prepared baking sheet. Bake for 10–12 minutes, until edges are golden brown. Let cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely before applying the icing.

4. To make the glaze, heat the milk, add coffee, and let it steep for 5–10 minutes. Strain the mixture and let it cool to room temperature for about 15 minutes. In a medium bowl, beat the butter until creamy. Add half of the sugar and beat until combined. Mix in the vanilla extract and half of the coffee mixture. Add the remaining sugar and beat again. Stir in the remaining coffee mixture and beat thoroughly. Spread the glaze over the cooled cookies. If desired, decorate with chocolate chips on top.
