
Oatmeal cookies with maple glaze
Description
The recipe won't take much time. Tender inside and crunchy outside, this oat cookie is a great start to the weekend. All you need to do is simply mix all the ingredients, freeze the resulting dough in the freezer, and then bake the cookies straight from the refrigerator. You can replace maple syrup with fresh liquid honey. Serve warm or chilled. Perfect with tea.

1. Preheat the oven to 200 degrees. In a bowl combine flour, rolled oats, baking powder, sugar and salt. Add butter cut into 1 cm pieces and beat on low speed. Mix buttermilk, maple syrup and eggs. Add to the butter mixture and stir. The dough may be sticky.

2. Place the dough on a well‑floured surface. Roll the dough out to a thickness of 2–2.5 cm. You should see pieces of butter in the dough. Using cutters, cut out cookies with a diameter of 7.5 cm and place them on a baking sheet lined with parchment paper. Gather the scraps of dough and cut out more cookies.

3. Bake the cookies for 20–25 minutes, until the top is crisp.

4. To make the glaze, mix powdered sugar, maple syrup, and vanilla extract. When the cookies are baked, let them cool for 5 minutes, then drizzle each cookie with 1 tablespoon of glaze. Lightly sprinkle oatmeal flakes on top and serve.
