
Oatmeal cookies with raisins

Even now, I often crave such cookies. Raisins can be replaced with other dried fruits—such as dried cherries or cranberries. You can also mix chocolate pieces or nuts into the dough. Oatmeal cookies melt in your mouth and go especially well with tea. Brown sugar can be substituted with white sugar, though the cookies will then be lighter in color. The finished dessert can be served at the table.

1. Preheat the oven to 180 degrees. In a bowl, combine melted butter and brown sugar. Cool slightly, then add eggs, vanilla, and honey. Next, add flour, cinnamon, and baking soda neutralized with lemon juice or vinegar. You should get a smooth, uniform mixture.

2. Add oats (preferably quick-cooking) and raisins. Mix well.

3. Line a baking sheet with parchment paper. Shape the cookies and place them on the paper, leaving a little space between them since the cookies will expand. The cookies should be oval-shaped and about the size of a teaspoon.
