
Oat cookies with kefir
Description
The recipe won't take much time. Oat cookies made with kefir turn out tender, porous, airy, and incredibly filling. Just 2-3 cookies are enough to satisfy your hunger for a long time. Use quick-cooking oats—they won't need long to soak in the liquid. If desired, sprinkle the finished cookies with powdered sugar before serving. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients. Optionally, you can add lemon or orange zest, ground cinnamon, etc. to the ingredient list.

Pour kefir of any fat content into a deep container: a bowl or salad bowl. Add quick-cooking oat flakes and mix thoroughly.

Leave the flakes in the liquid for about 15–20 minutes; during this time, they will swell nicely and absorb the liquid.

Crack a chicken egg into a bowl, add granulated sugar, vanilla sugar, and salt. Mix thoroughly, whisking slightly.

Melt the butter and pour it into the container. Gently mix everything. You can substitute the butter with high-quality margarine, but not with spread.

Add the high-grade flour in parts and mix it into the oat mixture. You should end up with a loose, sticky oat dough that cannot be formed into a ball.

Preheat the oven to 180 degrees and line a baking sheet with parchment paper. Grease the paper with vegetable oil and place spoonfuls of batter onto the paper. Try to leave at least 2–3 cm between each portion, as the dessert will slightly expand during baking. Place the baking sheet on the middle rack of the oven.

Bake the oat cookies with kefir for about 20 minutes. Baking time depends on your appliance's power and the size of the cookies. Check the cookies and turn off the oven when they turn golden brown. The cookies will be soft initially and become crisp after cooling. Place them on a plate and let cool for 10–15 minutes.
