
Oat crepe with avocado
Description
The pastry is simple and quick to make. This tasty, filling, and wholesome snack works equally well as a great breakfast idea or as a midday bite. You can substitute oat flour with rolled oats—just grind them in a blender first. Avocado packs a unique mix of beneficial nutrients; I highly recommend making it part of your everyday meals. For a fuller flavor I also add fresh tomatoes, but you can easily swap them for any other vegetables, smoked salmon, a poached egg, or cheese. Feel free to experiment with fillings and get a new, interesting flavor every time. Serve warm or chilled. Perfect with tea.

Prepare all ingredients.

Beat the egg with salt.

Add milk and oat flour.

Mix everything well.

Using the prepared batter, cook one thin pancake in a greased frying pan.

Cut the avocado in half and scoop out the flesh with a teaspoon. Season with salt and pepper and drizzle with lemon juice. Then mash with a fork until puréed. Cut the tomato into wedges.

Place the finished pancake on a flat surface.

Spread the pancake over its entire surface with mashed avocado and arrange sliced tomato wedges along one edge. Season the tomatoes with salt and pepper to taste.
