
Vegetable boats from eggplants
Description
This is a classic recipe for eggplant boats. Preparing this dish is quite simple. All you need is: vegetables, ground meat, cheese, herbs, spices, and the desire to cook. I should note that you can use any kind of ground meat and any cheese. Use spices to your taste—I usually add dried Provence herbs and pepper. Good luck!

We thoroughly wash the eggplants, cut them in half, and remove the flesh. Then we salt them and leave them for 30 minutes.

We pour cold water over the eggplant flesh and leave it for half an hour.

Finely chop the onion, garlic, peppers, and tomatoes.

Heat a frying pan, sauté onion and garlic in vegetable oil, then add the ground meat, mix and cook for another 5-7 minutes until the meat is crumbly.

The eggplant flesh should be squeezed to remove water, then added to the pan. Fry for another 5 minutes.

Now it's time for the tomatoes and peppers. Don't forget the salt and your favorite spices. Mix everything thoroughly, sauté for another 8–10 minutes, then remove from heat.

Fill the eggplant boats with the stuffing, sprinkle with grated cheese on top, and place on a baking sheet. Bake in the oven for 30 minutes at 180 degrees.
