
Vegetable canapés

Perfect for holidays and everyday alike. I’d say this simple vegetable canapé recipe seems made for little ones! The finished canapés look beautiful, disappear quickly and with pleasure, and they’re very healthy too! Of course, you can improve this vegetable canapé recipe—in summer, I think slices of fried eggplant and fresh tomato would look wonderful on a little “pillow” of mashed potatoes. In short, don’t limit your imagination in any way. Serve with herbs and sauce.

1. First, let's prepare the ingredients. Boil the potatoes and mash them into a puree, as usual. (I have much more puree here than we need.) Boil the beets as well and let them cool.

2. Now sprinkle the surface with flour and carefully knead the flour into the purée by hand until you have a pliable "dough". Season with salt and pepper to taste. Add the frozen peas at this point too (so they won’t get squashed by the rolling pin), and roll the dough out with a rolling pin to half a centimeter thick.

3. I make these round canapés using Kinder "egg" shells. Lightly dust each little ball with flour.

4. Using the same method, cut circles from cheese, boiled beets, and radish. Thread them on in any order, pierce with a skewer, and garnish as desired. Ready to serve!
