
Vegetable meatballs
Description
The dish is prepared without unnecessary complications. I suggest baking vegetable meatballs in the oven with tomato paste. I make the meatballs from rice with added vegetables—zucchini, carrots, and onion. The dish turns out hearty and delicious, and will appeal to everyone. Serve the finished dish warm.

Prepare all the ingredients.

Rinse the rice and cook until done for 15 minutes. Add salt to taste while cooking. Let the cooked rice cool.

Dice the peeled onion and grate the carrot on a grater.

Pour 1 tbsp of oil into a pan, turn on medium heat. Sauté onion with carrot for a couple of minutes.

Grate the young zucchini on a grater.

Add all the vegetables to the rice, don't forget to season with pepper and a little salt. Mix the vegetable filling.

Lightly grease the bottom of the baking dish with oil. With hands moistened with water, shape the meatballs and place them in the dish.

Pour the meatballs with tomato sauce—diluted tomato paste with water. Use approximately 180-200 grams of water.
