
Vegetable appetizer cake with zucchini
Description
The appetizer is quick and easy to prepare. I’d like to present a very interesting appetizer option in the form of a cake—a vegetable appetizer cake with zucchini. Such a cake holds its shape well thanks to soaking in mayonnaise or sour cream and works excellently as a table centerpiece. You can experiment a bit with the layers, alternating them differently. You can also make a slightly spicy appetizer cake by adding spices to taste. The appetizer is ready. Serve immediately.

1. Slice the zucchini into rings and fry it in a small amount of vegetable oil.

2. Grate the carrots on a coarse grater, fry them, and at the end add finely chopped garlic. Salt and mix with finely chopped herbs.

3. Line the bottom of the bowl you will use to shape the cake with plastic wrap. First spread half of the carrots and press them down firmly. Then add a layer of sautéed zucchini, working up along the sides of the bowl.

4. Place the remaining half of the carrots and press down firmly. Spread with mayonnaise or sour cream. Boil and cool the potatoes, cut them into small cubes, and place them on the carrot layer, sprinkling garlic over them. Press down firmly. Spread everything with mayonnaise or sour cream and arrange the sliced cucumber rounds on top.

5. Spread everything again with mayonnaise or sour cream and add the final layer of zucchini. Wrap the cake in plastic wrap and press firmly so the cake does not fall apart. Refrigerate for several hours, then carefully unwrap and place it on a serving plate. Garnish the cake with tomatoes and fresh herbs.
