
Vegetable Tian
Description
It works for both a holiday and everyday meals. Vegetable tian is a very healthy vegetable appetizer that is perfect in the summer heat, when you don’t want heavy, fatty dishes at all. From personal experience, I can say that this appetizer pairs wonderfully with dry white wine. You can also serve it as a hot side dish with any main course. This vegetable tian is really delicious—try it for yourself.

Step 1

Peel and finely chop the onion and garlic, then sauté them in a skillet in olive oil until golden.

Wash the zucchini and slice it into 5–7 mm thick slices. Do the same with the tomatoes and peeled potatoes.

Blend the fried onion and garlic in a blender until they reach a caviar-like consistency.

Take a baking dish and spread our garlic-onion mixture from the blender on the very bottom.

On top, arrange a kind of canapés from slices of zucchini, tomato, and potato pierced with a skewer or toothpick. However, before baking, the skewers or toothpicks must be removed.

Next, lightly drizzle the vegetables with olive oil, sprinkle with spices, and add sprigs of thyme. Cover with foil and place in the oven. Bake for 45 minutes at 180 degrees.

At the very end, sprinkle the hot vegetables with grated cheese. It can be served either hot or cold.
