Whenever I have friends over for a casual get-together, with no special occasion, I always prepare sauces to go with appetizers (chips, nachos, and others—some of which I also make from scratch), such as pesto, chili sauce, and various others. They are incredibly simple to make and turn out amazing! They're made from fresh vegetables, and I can control exactly how spicy they are. The same goes for sauces accompanying hot dishes. I would never serve my pasta with ordinary ketchup, no matter how highly advertised it might be. I'd rather make everything myself. How? Finely chop the carrots, onions, and celery (you can use a blender).

Heat a skillet, add olive oil. Sauté the prepared vegetables. Cook until the carrots begin to lose their color and the onions become slightly translucent.

Press garlic into the vegetables, add fresh and dried herbs. Salt and pepper to taste.

Transfer our sauté to a saucepan and place it over medium heat.

Then add the remaining ingredients and bring to a boil. Reduce the heat and simmer the sauce for about two hours, stirring every 20 minutes. Your amazing homemade sauce is ready ;)
