Perfect for the table and for drinks. Vegetable millefeuille is delicious. No, not like that. Vegetable millefeuille is VERY DELICIOUS! The main secret of preparation is that the vegetables themselves must be fresh and tasty, preferably homegrown. And the cheese, of course, should preferably be a good one. Then you'll end up with a simply magical dish that will completely change the attitude of die-hard meat lovers (like my husband) toward vegetable dishes. Try it — I promise you simply can't help but love this wonderful French dish. So, I'll tell you and show you,

    Prepare the ingredients, wash all the vegetables.

    Wash the bell pepper, pat it thoroughly dry with paper towels, rub it generously with olive oil, and place it in an oven preheated to 200°C. Bake for exactly 7 minutes.

    Peel the eggplants. Cut the zucchini and eggplants lengthwise into thin slices 2–3 mm thick. Place the thin slices on the baking sheet with the peppers (in a single layer) and drizzle generously with olive oil. Bake the peppers, eggplants, and zucchini for another 6 minutes at the same temperature.

    Remove the roasted vegetables from the oven and let them cool. Then remove the seeds and membranes from the pepper and cut it into 4 pieces.

    Blanch the tomato — drop it into boiling water, leave it for 1 minute, then remove and plunge into ice water. Peel the tomato and slice it into thin rings about 2–3 mm thick.

    Mix the finely chopped herbs and goat cheese. Mix well with a fork. Add half a clove of garlic, pressed through a garlic press, to the same mixture.

    Take a suitable mold (in the photo—the one in the bottom right corner, a very ordinary semicircular bowl). Layer the vegetables one at a time, spreading each layer with the cheese mixture. When the bowl is completely filled, place it in the freezer for 10 minutes.

    After 10 minutes, take the mold out of the freezer, flip it onto a plate — and that's it, the vegetable mille-feuille is ready to eat! Before serving, sprinkle with grated Parmesan (optional).
