
Vegetable kugel
Description
The recipe won't take much time. Vegetable dishes should definitely be present on the table in every family. It's not necessary to eat them raw—you can make a delicious casserole out of vegetables, like this one. Serve hot.

Step 1

Peel the pumpkin, potato, carrot, and onion, then wash them under running water. Grate the pumpkin, carrot, and potato on a coarse grater, squeeze out the excess juice, and transfer to a bowl, thoroughly mixing all the ingredients.

Chop the onion into small cubes, peel the garlic cloves and mince them with a knife or grate on a fine grater. You can also use a special press.

If you are using frozen spinach, let it thaw, then squeeze out the liquid and finely chop it. Add the spinach with onion and garlic to the other ingredients in a bowl and mix everything thoroughly.

Add flour to the vegetables and mix again. Break the raw chicken eggs into a bowl and beat them with a fork. Pour the beaten eggs into the mixture and stir the dough.

Take an elongated baking dish (the kind used for baking loaves works well) and line it with parchment paper. Place one-third of the prepared vegetable mixture into the dish. Arrange several crab sticks on top. Repeat this process two more times.

Pour the kugel with melted butter on top. Preheat the oven to 180 degrees, place the dish in the oven and bake for 40 minutes until fully cooked. Serve the kugel hot or cold with herbs and sour cream.
