
Vegetable stew in a pot
Description
If the vegetable stew is prepared in a pot using ripe, juicy vegetables, you may not need to add water at all, or only a very small amount. The dish is very tasty and filling. Rice and eggplants make it absolutely delicious. Vegetable stew can be served either as a side dish or as a main course. Peel the eggplants, slice them, salt, and let stand for an hour.

Slice the potatoes into rounds.

Dice the onion.

Slice the carrot into rounds.

Cut the pepper into small pieces (cubes).

Rinse the rice.

Blanch the tomatoes with boiling water, peel them, and cut into wedges.

Place a layer of potatoes in the pot first.

Place the squeezed eggplants on the potatoes.

Next, add the pepper, carrots, and onion.

Next, place a layer of tomatoes, and on top of them, put the rice.

Then repeat the layers, but place tomatoes on top instead of rice, add water and oil, and simmer over low heat for an hour and a half.
