
Vegetable stew with pork
Description
The recipe won't take much time. Pork goes well with any vegetables, not only when baked, but also in stews. To prepare vegetable ragout with pork, you'll need pork tenderloin, one large onion (or half of it), sweet bell pepper (you can use either red or yellow), a couple of mushrooms, and soy sauce. You may omit the pesto sauce—it's up to your taste. Serve hot.

Prepare all the necessary ingredients.

I recommend cutting the vegetables rather coarsely than finely. Cut the meat into cubes. Slice the eggplant and zucchini into quarters. Cut the carrots and peppers into slices, the onion into half-rings. Garlic should be finely chopped.

On a preheated skillet with a small amount of oil, sear the pork on all sides until golden brown, which will take about 5 minutes.

Then add the carrots and onion, continue frying over high heat for 3-4 minutes.

Then it's time to add the eggplant, zucchini, and pepper. Mix everything well and cook for another 4 minutes.

Then add the tomato, garlic, and basil—just tear it by hand and add it as well. Mix. Add half of the rosemary.

Pour in half a cup of water, soy sauce, salt to taste, and add your favorite spices. Simmer covered for 10-15 minutes over low heat until done.

Serve the finished vegetable stew with pork hot, drizzled with pesto sauce.
