
Vegetable stew with tomatoes
Description
The dish is prepared without unnecessary complications. Since we're using canned beans, it cooks very quickly. But if using dried beans, it's best to soak them overnight, then boil them almost to readiness before starting to braise. Canned tomatoes can be replaced with fresh ones, provided you peel and finely chop them. The finished dish can now be served.

Wash and chop the carrots and bell pepper, and also chop the onion.

In a small cauldron, heat the oil and add carrots, pepper, onion, and washed parsley or cilantro. Simmer everything until the vegetables become tender.

Now add the canned tomatoes and beans, season with salt and pepper, and simmer for about 20 minutes.

At the end, I added the leftover pasta from dinner to the dish and simmered everything for another 3 minutes.

When serving the dish, I sprinkled it with grated cheese.
