
Vegetable stew with zucchini

Take a heavy-bottomed pot and heat olive oil in it. Then add finely shredded cabbage to the pot.

After a couple of minutes, add diced zucchini to the cabbage. Simmer over low heat.

In another skillet, sauté the grated carrot (on a coarse grater) and thinly sliced onion.

When the cabbage and zucchini are almost ready (approximately 10–15 minutes after starting to simmer), add the tomatoes, cut into small cubes, or tomato paste to the pot. Mix well.

Simmer the cabbage with zucchini in tomato sauce for 5 minutes, then add finely chopped garlic, fried onion, and carrot to the pan. Mix well.

At the very end, sprinkle the finished stew with chopped fresh herbs, remove from heat, and cover with a lid—let it sit for about 5 minutes. Then the zucchini stew can be served.
