
Vegetable stew with eggplant
Description
The stew preparation process is very simple but labor-intensive. You need to wash, peel, and chop all the vegetables, which takes up most of the time. You can add any vegetables to the dish according to your taste (and even replace those listed in the recipe). Fresh herbs, dried spices, and seasonings can give the stew a rich flavor.

1. Thoroughly wash all the vegetables to remove dirt. Then peel and chop all the vegetables, except for the greens, into small pieces. Place a cauldron or a high-sided frying pan over the heat, pour in olive oil, add the onion first, and a couple of minutes later add the carrots.

2. After sautéing the onion and carrots, add the remaining vegetables. Sauté them briefly, then pour in a small amount of cold water (just enough to cover the bottom), cover with a lid, and simmer the vegetables until tender. Wash the herbs, finely chop them, and add to the pot. A few minutes before cooking is complete, season with salt and pepper to taste. Turn off the heat, cover with a lid, and let the stew stand for 15–20 minutes.

3. Serve the finished vitamin stew hot or cold with a slice of black bread.
