
Vegetable stew with eggplants and zucchini
Description
The dish is prepared without unnecessary complications. All the vegetables need to be peeled, chopped, sautéed until soft, and then simmered. Here is a simple recipe. The finished dish can be served at the table.

Prepare all the necessary vegetables. Wash the eggplant and cut it into cubes. Do the same with zucchini, potatoes, and onions. Grate the carrots on a coarse grater.

Wash the pepper, remove the seeds, and cut the vegetable into strips.

In the multicooker bowl, heat the oil and sauté the vegetables for a couple of minutes in "Frying" mode until tender. It's very convenient if you have an extra bowl—you can transfer the vegetables to it after frying.

No multicooker? Then you can easily sauté the vegetables in a frying pan and transfer them to a heavy-bottomed pot.

Rinse the rice several times in cold water and place it on top of the vegetables. Cut the tomatoes into cubes and add them to the pot. Add salt, pepper, and sugar to taste. Pour in a little water. Simmer with the lid closed in "Stewing" mode for 30-40 minutes.
