
Vegetable dolma
Description
The recipe won't take much time. To make vegetarian dolma, you just need to replace the filling with something equally filling as meat, but with plant-based proteins. That's how this version of a hot and satisfying dish came about. You can read about it. Serve hot.

Step 1

Sauté finely grated carrots and chopped onions in oil, adding dried garlic. After 5–7 minutes, add tomato pulp without skins. Fry the filling for another 5 minutes, stirring.

Boil the rice and chickpeas in advance. Mix them together with the sautéed vegetables and all the finely chopped herbs. Add salt and pepper.

Add barberries to the filling as well. Mix well. Wrap the filling in grape leaves.

Take a heavy-bottomed pot. Line the bottom with grape leaves. Place the dolma on top, along with lemon slices or wedges. Press the dish down with a plate and a weight. Pour water into the pot until it reaches 1 cm above the dolma.

Bring the water to a boil. Then reduce the heat and simmer the dolma for 30 minutes over low heat. Serve the dish with sauce.
