
Vegetables baked in the oven in foil
Description
The recipe won't take much time. Baked vegetables are a very tasty and interesting dish because everyone can use their favorite vegetables, oils, dried or fresh herbs, and aromatic spices. It can be a main course, a side dish, or an appetizer. Serve hot.

Peel, wash, and chop all the vegetables.

In a deep cast-iron skillet, add 1 tablespoon of olive oil, heat it, and sauté finely chopped shallot until golden brown.

Add celery, carrots, and cook for 2 minutes.

Place the sliced tomatoes and pour in half a cup of hot water.

Add the bell pepper and, after a few minutes, add the eggplants and zucchinis.

Salt the vegetables and cook everything together for 10-15 minutes, adding boiling water if necessary.

Take two sheets of aluminum foil, place the vegetables and feta slices in the center.

Add olives, drizzle with olive oil, arrange young green basil leaves, and season with pepper.
