
Vegetables in pots baked in the oven
Description
The dish is prepared without unnecessary complications. Of course, the most beneficial vegetables are raw, but not all of them can be eaten that way. Boiling vegetables destroys up to 80% of all vitamins, while baking not only preserves the maximum nutritional value of the ingredients used but also their natural color. The finished dish can be served at the table.

Step 1
Peel the onion and carrot, clean and wash the mushrooms, then finely chop them. Dice the onion and grate the carrot on a coarse grater. Sauté the vegetables in vegetable oil until soft, then add the mushrooms, season with salt, and cook until the liquid has evaporated.

Peel and finely chop the zucchini, bell pepper, potatoes, and tomatoes. Place the vegetables in a frying pan, season with salt to taste, mix well, and cook for 7–10 minutes.

Place the vegetables in the pots and cover with lids. Put the pots in a preheated oven at 200 degrees for 40 minutes.

Remove the pots from the oven. Serve the vegetables in the pots or transfer them to a plate.
