Open plum pie

Description

Delicious baking for the whole family. As far as I know, similar open pies are very popular in traditional German cuisine; however, I won’t venture to say for certain—I’m no expert on culinary history. I can guarantee, though, that if you follow this straightforward recipe with photos carefully, your pie will turn out superb. Good luck with the preparation. You can serve it with tea or coffee.

    I recommend always gathering and arranging all the ingredients before you start cooking any dish and putting them on the table. Here, in the photo, are the ingredients for the dough.

    Wash the plums and let them dry.

    We’re working on the dough. The dough is very easy to make: first make a sponge (mix a small amount of flour with warm milk and yeast), then add all the remaining dough ingredients (the rest of the flour, butter, eggs, and sugar), combine and knead the dough. Cover the shaped ball of dough with a towel and leave it in a warm place for about 30 minutes.

    While the dough rises, quarter the plums. You can cut them not quite all the way through so they open like an accordion fan—as in the photo.

    Roll out the risen dough into a sheet and place it in a baking pan. Put plums on top. Sprinkle the plums with cinnamon, then arrange several pieces of butter on top.

    Place the pie into an oven preheated to 200 degrees as shown. Bake for about half an hour until done.
