
Open pie with egg
Description
Perfect with tea and coffee. Open pies (so‑called galettes) are very popular today, and it's no surprise! The baking is simple, anyone can master it, and it tastes no worse than any complex pie. The filling can be any; today I'll tell you how. Serve cooled or slightly warm.

Prepare all the ingredients.

Combine the flour and butter. Add 0.5 tsp of salt and rub everything together by hand into crumbs.

Add water and knead a soft, pliable dough. Gather it into a ball, wrap it in plastic film, and place it in the refrigerator for 30 minutes.

Peel the boiled eggs and cut them into cubes.

Add grated cheese to them.

Finely chop the onion with a knife, add sour cream, one raw egg, salt, and ground pepper to taste.

On a sheet of parchment, roll out the dough into a circle. In the center, leaving a little space from the edges, place the filling. Smooth the filling with a spatula and fold the edges over. Brush the edges of the pie with egg yolk and sprinkle with sesame seeds. Bake at 180 °C for about 30–40 minutes.
