Description

1. If you have a whole piece of meat, cut it into thick slices. Coat each piece in spices and lightly pound.

2. Over high heat, sear the pieces in vegetable oil until a golden crust forms. Once the crust appears, remove from heat and, directly in the same skillet, transfer to the oven. Place the pieces with aromatic herbs, add wine and chopped onion.

3. From time to time, the meat should be turned over and basted with the syrup in which it is simmering. I cook it this way in the oven at 170 degrees for an hour, until the marinade becomes thick like jam and the meat turns tender. It's ready—call everyone to the table!
