
Lamb cutlets with mint and carrot purée

1. Preheat the oven to 230 degrees. Finely chop the mint and basil. Mince the ginger. Combine the breadcrumbs, mint, basil, ginger, and 3/4 teaspoon of salt in a bowl, drizzle with oil and mix well. Season the lamb with salt and pepper.

2. Heat a skillet over high heat and spray with olive oil. Quickly sear the lamb cutlets evenly on all sides. Then top with the herb mixture and bake in the oven for 15 to 18 minutes. Let the cutlets cool slightly.

3. Peel the carrots and parsnips and slice them. Place in a large saucepan. Add milk, garlic, and salt. Bring to a boil. Reduce heat, cover the pan diagonally with a lid, and simmer for 20 minutes until the vegetables are very tender. Drain, reserving the liquid.

4. Transfer the vegetable mixture to a food processor and blend until smooth, forming a purée. Add butter and the reserved liquid as needed to thin the purée. Strain the purée through a fine sieve, then season with salt and pepper. Serve the chops with carrot purée.
