Description
If you want the cutlets to cook better and faster, I recommend tenderizing the meat first. To prevent splattering, simply cover the steaks with plastic wrap or place them in a plastic bag before pounding. Also, don't forget to marinate the cutlets: drizzle the meat with lemon juice, sprinkle with your favorite spices, and let it sit for 15–20 minutes. Another tip—choose meat with some fat to make it juicier; during cooking, the fat will melt and soak into the meat, making it more tender. Mix all the sauce ingredients—add finely chopped cilantro, minced garlic, chili powder, and lime juice to mayonnaise. Set aside 1/2 cup, and use the other half when frying the cutlets.

Place the cutlets on the grill and cook on both sides until fully done.
