Description

The dish is prepared without unnecessary complications. Well, perhaps liver cutlets might seem too simple for a festive anniversary dinner, but they are perfectly suitable for a family dinner on a Sunday evening. You can also treat yourself to these juicy, aromatic cutlets on weekdays, as they can be made quite quickly, in a hurry. To prepare liver cutlets fast, do not fully thaw the main ingredient—better to defrost it only partially, so the liver remains fairly firm. In this case, slicing and pounding it will be much easier, and the recipe for liver cutlets won't cause you any trouble. The ready dish can be served at the table.

    Wash the liver, dry it, and remove the membrane. Cut it into pieces about 1 centimeter thick, then season with salt and pepper.

    To tenderize the liver, use plastic wrap—place the liver pieces between two layers, transfer them onto a cutting board, and gently pound both sides with a mallet. Then carefully remove and discard the plastic wrap, and transfer the liver to a bowl. You can also use this method for tenderizing meat and poultry, but making liver cutlets clearly demonstrates all its advantages—without the plastic wrap, your workspace would definitely not stay this clean ;)

    Fill one plate with flour, and beat an egg in another.

    Place the cutlets in a pan with heated vegetable oil and fry on both sides under a lid over medium heat until golden-brown. The cutlets should not turn black, but must not remain undercooked either. Check their readiness with a fork—if a fair amount of clear juice (without any signs of blood) comes out when pierced, then the cutlet is perfectly done :)

    Serve the liver cutlets with mashed potatoes, boiled rice, pasta, or any porridge. However, they are delicious both hot and cold—for example, on a slice of rye bread spread with sour cream and sprinkled with finely chopped garlic. :)
