Description
If you carefully pound the meat on all sides before frying, it will be tender enough. Also, I recommend using minimal flour coating to avoid overpowering the meat's flavor with breadcrumbs. Before serving, you can top the cutlets with grated cheese and a fried quail egg—it will look fantastic even on a festive table.

1. Wash the meat, dry it, and cut into portion-sized pieces. Gently pound on both sides. Season with salt and add your favorite spices.

3. In a separate bowl, beat the egg and dip the cutlets into it.
