Lamb cutlets
Description
The dish is prepared without unnecessary complications. Lamb cutlets cook very quickly. Rub the meat with a mixture of salt and spices, then sear on a well-heated pan until a brown crust forms, about 3.5–4 minutes per side. Once cooked, set the meat aside in a warm place to rest for a few minutes. If desired, you can prepare an onion sauce to perfectly complement the cutlets. To make the sauce, sauté onions in a pan until golden, pour in broth, and bring to a boil. Add a mixture of starch and water, then cook, stirring, until thickened. Serve the cutlets with the onion sauce. The dish is ready to be served.
