Step 1

1. The recipe for cutlets in batter should begin with preparing the batter. To do this, sift flour into a deep bowl. Add a little salt and, at the same time, put water on the stove and bring it to a boil. Pour vegetable oil into the flour and mix well. When the water boils, pour it into the batter, stirring constantly. The batter should turn out thick and elastic.

2. Transfer the dough onto the table and knead it well by hand. Then let it rest for 10 minutes.

3. Wash the meat and dry it. Remove any excess fat and membranes, if present. Using a sharp knife, slice the meat into thin pieces. Lightly pound each piece. Season both sides of each piece with salt and pepper to taste, and add your favorite spices if desired. Let the cutlets sit for 10-15 minutes.

4. Peel the onion and slice it into half-rings. Pour a little vegetable oil into a frying pan and heat it well. Add the onion to the pan and fry over medium heat until lightly golden.

Step 5

5. It's time to shape the dish. Take a small piece of dough and roll it out thinly. Place the cutlet in the center of the dough, and on top of it, add some sautéed onion. You can also add a little sour cream or mayonnaise. Cover the cutlet with dough and seal the edges tightly.

Step 6

6. Pour vegetable oil into a frying pan and heat it well. Place the cutlets in the pan and fry until golden brown on both sides, covered with a lid. Once the breaded cutlets are ready, transfer them to a paper towel to remove excess oil, then serve.
