
Spicy Tomatoes for Winter

Perfect for stocking up for winter. To be honest, I usually can regular tomatoes, but last year a friend shared a bucket of green ones with me. Without thinking twice, I found this simple recipe for spicy winter tomatoes and got to work. A couple of months later, on my husband’s birthday, we decided to open a jar for the holiday table—to try them, so to speak—and everyone loved these little tomatoes so much, especially the men, that they spent the whole evening talking about and praising nothing but them. After that, I decided I would make spicy winter tomatoes at home every year, especially since it’s very easy and quick. Serve at the table or store in the pantry.

First, wash all the vegetables and fresh herbs, and sterilize the jars.

Now we cut a slit down the middle of each tomato and place in the pocket a couple of garlic slices, a ring of hot pepper, and a sprig of parsley.

Place parsley sprigs at the bottom of the jar and fill it with tomatoes, then sprinkle salt on top.

Pour everything with water, close the jar with a lid, then put it in a cool place, for example in the basement, cellar, or on the balcony.
