
Hot Peppers in Batter
Description
This spicy Mexican appetizer, chiles rellenos, will undoubtedly surprise your guests. Mexicans usually stuff chili peppers with meat or cheese and fry them in batter. We, however, will try to make a lighter version of this appetizer.

1. Preheat the oven to 175°C. In a bowl, mix the eggs, milk, salt, pepper, paprika, and cayenne pepper.

2. Cut the chili peppers in half lengthwise and arrange in a single layer in a baking dish. Sprinkle the chili peppers with half of the grated Monterey Jack cheese.

3. Arrange the remaining chili pepper halves on top and sprinkle them with the remaining cheese. Pour the prepared egg mixture over the top.

4. Place the baking dish with the peppers in a large roasting pan filled with 1 cm of water, and bake the peppers for 35 to 45 minutes, until done. The tops should be lightly golden.

5. Let cool slightly, cut the roasted chili peppers into squares with a large knife, and serve immediately with warm corn tortillas.
