
Spicy Pig Ear Appetizer
Description
The recipe won't take much time. Instead of regular aspic, you can make a delicious Mexican-style dish from pig ears. This appetizer pairs perfectly with strong alcoholic drinks such as: rum, tequila, or vodka.

1. First, let's prepare the ears: they need to be cut along the folds, then we singe them over an open flame so that no bristle remains, and with the help of a metal mesh or a knife we clean them thoroughly.

2. Put the cleaned ears in a pot, cover with water, and bring to a boil. Then skim off the foam, add peppercorns and a bay leaf, and simmer over low heat for about another hour.

3. When the ears have finished cooking, let them cool, then cut into short strips or small cubes. Peel and slice the onion into thin wedges. Halve the sweet pepper, remove the membranes and seeds, and cut into strips. Sauté the onion in vegetable oil, add the pepper, and stew for about five minutes with the lid on.

4. Soak the horseradish root in water, peel it, and grate on a fine grater. While grating the horseradish, breathe carefully. Peel and finely chop the garlic (you can use a garlic press). Rinse and chop the parsley.

5. Drizzle the prepared ears with lime juice – this gives the dish a Mexican flair and makes the flavor more interesting and vibrant.

6. In a deep bowl, mix the herbs, garlic, horseradish, onion, and ears. Add pepper and salt.
