
Spicy Chicken with Orzo Pilaf
Description
Preheat the oven to 200 degrees. In a large skillet, melt 1 tablespoon of butter. Season the chicken on both sides with salt and pepper. Sear until golden brown and crispy, about 10 minutes. Transfer to a baking dish. Drain the fat from the skillet, leaving 1 tablespoon, and reduce the heat. Add the onion and cook until translucent, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the tomatoes, season with salt and pepper, and cook for about 3 minutes. Stir in the vinegar and add the chicken, bringing the liquid to a boil. Place the skillet, uncovered, into the oven and bake until the chicken is cooked through, about 30 minutes. Meanwhile, in a medium saucepan, heat 1 teaspoon of butter over medium heat. Add the carrots and cook until slightly softened, about 3 minutes. Add the orzo and stir to combine. Pour in 1 3/4 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer until the water is absorbed and the orzo is tender, about 15 minutes. Remove from heat. Serve the chicken with the orzo.
