
Turkey leg osso buco
Description
The dish is prepared without unnecessary complications. Round pieces of bone-in meat are seared until golden brown, then simmered at a low temperature, often in the oven, with vegetables and tomato passata. I suggest cooking osso buco in a multicooker—it turns out simply wonderful. The finished dish can be served at the table.

For ossobuco, the meat should be cut into rounds no thicker than 4-5 cm. Not everyone at home will be able to do this neatly. Therefore, it's easier to buy turkey steak from the store. Rinse the pieces thoroughly, dry well, and season the meat with salt and freshly ground black pepper.

Sear the meat in a mixture of olive and butter in a frying pan until a golden crust forms. You can dredge the steaks in flour beforehand, but I chose not to do so.

Dice the onion and garlic.

Celery and carrots should also be cut into cubes, but I prefer them sliced into rounds.

Transfer the seared turkey medallions to the multicooker bowl, then lightly sauté the onion, carrot, and celery in the remaining oil. Pour in the wine and reduce by half over increased heat.

Pour the contents of the skillet into the multicooker bowl over the turkey. Add blended tomatoes in their own juice, salt, a pinch of sugar, and simmer for about an hour. Limit the temperature to 120°C if possible. If there is no "Multicook" program, you can use the "Baking" mode.

After an hour, sprinkle the dish with pepper and a mixture of dried oregano, rosemary, and basil. Simmer for another half hour.

Meanwhile, prepare the gremolata – a mixture of grated lemon zest, finely chopped garlic, and parsley. You can add a pinch of freshly ground pepper and a little olive oil to the mixture.

Add half of the gremolata to the osso buco, switch the multicooker to the Keep Warm mode, and let it sit for about 20 minutes.

Serve the osso buco hot, with fresh bread and gremolata. If desired, serve with a side of pasta or rice.
