How to make grilled sturgeon even healthier? The answer is simple—prepare it as simply as possible: use a minimal number of ingredients for the marinade. By the way, the classic grilled sturgeon recipe doesn't include white wine in the marinade. However, I add it "out of habit," and I always enjoy the result. If you have a whole sturgeon, start by thoroughly rinsing the fish under running water to remove the slime, clean out the cavity, and cut it into medallions. If you're using ready-made store-bought steaks, simply rinse them thoroughly and pat dry. Next, prepare the marinade for the sturgeon. In a suitable bowl, mix together wine, vegetable oil, and lemon juice. Generously season the steaks with salt and pepper, place them into the marinade, and refrigerate the fish for several hours.

Then preheat a home grill or oven in grill mode and grease the grill rack with vegetable oil. If baking sturgeon in the oven, place a baking tray under the rack, as the fish is fatty and may drip and make a mess inside the oven. Then place the medallions on the rack and cook the fish for about 20–30 minutes.

While the fish is cooking, let's prepare the side dish. The best side for fatty sturgeon is vegetables. You can serve the vegetables either fresh or grilled together with the fish, depending on your preference. Sturgeon pairs best with dry white wines from the French region; the dish can also be accompanied by Italian white bread—ciabatta. Enjoy!
