Instructions

Step 1

1. First of all, clean and wash the fish: carefully cut open the belly with a sharp knife and remove the innards, then thoroughly rinse.

Step 2

2. Generously salt the fish inside and outside, let it sit for 5-7 minutes, then rinse it and pat dry with a paper towel. Season again with salt and pepper to taste, lay out a sheet of foil, place the fish on it, drizzle with olive oil and lemon juice, then tightly wrap the fish in the foil to keep all the juices inside.

Step 3

3. Bake the sturgeon in the oven for 40 minutes at 200 degrees. Then remove the fish, unfold the foil, and spray with olive oil again. Return to the oven and bake for another 15 minutes. After the required time, turn off the oven, but do not remove the fish—let it sit for 20 minutes.
