First, we need to prepare the fish. For this, the sturgeon should be gutted, and its gills and mucous membrane removed. After that, thoroughly rinse the fish under running water, dry it, and rub it with salt and spices.

Chop the fresh herbs, mix with a little mayonnaise, and use this mixture to stuff the sturgeon. Secure the fish's belly with toothpicks. Place the sturgeon on a sheet of foil with the belly side down. Make shallow cuts along the back and insert lemon wedge halves into them. Drizzle the sturgeon with olive oil, sprinkle with juice from the remaining lemon, and carefully wrap the fish in foil.

Bake the sturgeon in a preheated oven at 200 degrees Celsius for about 20–30 minutes (depending on the fish size). After the time is up, carefully remove the sturgeon from the oven, unwrap the foil, and transfer the fish onto a serving dish. Create a mayonnaise pattern along the back, garnish with fresh vegetables, and serve. Enjoy your meal!
